Chickie Breakfast Sandwhich

I’ve recently discovered that I love Chickpeas. Whether they are tossed with olive oil, salt and pepper, or mashed into a spread. This recipe is a new creation that I like to make for breakfast.

1 English Muffin

1/2 ripe Avocado, sliced thinly

1/4 cup Chickpeas

1 Tbsp Olive Oil

Small bunch of Cilantro

Salt and pepper to taste

 

Directions:

To make the chickpea paste, add the peas, olive oil, chopped cilantro and salt and pepper to a bowl and use a fork to mash it all together. I used a fork instead of a food processor because it’s chunkier.

Slice your avocado, and any other veggies you may want to use and sprinkle them with salt and pepper.

Assemble your sandwich and your done! It’s a quick, on the go ‘wich that will keep your hunger pains at bay. Let me know what you think and share your photos with me via Instagram and Twitter.
